For most of my life, beets were simply those intensely red vegetables that appeared occasionally beside dinner. I knew they were nutritious, but I had no idea why researchers, athletes, and nutritionists had become so interested in them.
Then I discovered what happens after we actually eat a beet.
Hidden inside that deep-red root is a particularly interesting combination of dietary nitrates, betalain pigments, folate, potassium, manganese, and fiber. And when beets become a regular part of the diet, some of their effects can be surprisingly noticeable.
1. Something Interesting Happens to Your Blood Vessels
This is probably the most fascinating thing about beets.
Beetroot is naturally rich in inorganic nitrate. After you eat it, bacteria in the mouth help convert nitrate into nitrite. Through additional reactions inside the body, some of this eventually contributes to the production of nitric oxide.
Nitric oxide is an important signaling molecule that helps blood vessels relax and widen.
When blood vessels widen, blood can flow with less resistance.

Athletes didn’t become fascinated with beetroot because of its color.

Here’s one advantage of eating beets rather than only drinking beet juice.
Fiber.
One cup of beetroot provides several grams of dietary fiber. Fiber helps support normal bowel movements and provides substrate for bacteria living in the large intestine.
When beets are juiced, much of that fiber is removed with the pulp.
So although beet juice is particularly useful in studies where researchers want a concentrated source of nitrate, whole roasted or boiled beets have their own nutritional advantage.
5. You’re Eating Betalains Every Day
That extraordinary crimson-purple color isn’t merely decorative.
Beets contain pigments called betalains, particularly betacyanins in red beetroot. These compounds have antioxidant properties and have attracted research interest for their potential biological effects.
Cutting a beet makes their power obvious—the pigment stains fingers, cutting boards, countertops, and sometimes clothes remarkably quickly.
Rather than viewing the color as an inconvenience, I now see it as a visual reminder of the plant compounds I’m eating.
6. You’re Getting Folate
Beets are also a useful source of folate, or vitamin B9.
Folate is involved in normal cell division and blood formation and contributes to normal homocysteine metabolism.
Unlike some of beetroot’s more exotic-sounding compounds, this is a straightforward essential nutrient that the body genuinely requires.
A varied diet containing vegetables such as beetroot can contribute to regular folate intake.
7. Your Urine Might Suddenly Turn Pink
This one frightens people who aren’t expecting it.
After eating red beets, some people notice their urine becoming pink or reddish. The same pigments can also change stool color.
The phenomenon is called beeturia.
Not everyone experiences it because digestion and metabolism of beet pigments differ between individuals.
If you’ve just eaten a large serving of beetroot and later notice a pinkish tint, the vegetable may be responsible.
Persistent red urine without an obvious dietary explanation, however, shouldn’t automatically be blamed on beets.
8. Your Plate Becomes Surprisingly Filling
Beets have another useful characteristic: they’re relatively low in calories while providing water and fiber.
That combination allows them to add considerable volume to a meal.
I particularly like roasted beetroot because cooking concentrates its natural sweetness. Pair it with protein and other vegetables and you’ve suddenly transformed a simple root vegetable into something genuinely satisfying.
You don’t need an enormous serving either.
9. Your Mouth Actually Matters
One of the strangest things I learned about beetroot involves mouthwash.
Remember the bacteria that help convert nitrate into nitrite?
Some of them live on the tongue.
Research suggests that strongly antibacterial mouthwash can disrupt this oral nitrate-reduction pathway and reduce the conversion of dietary nitrate to nitrite.
In other words, the bacteria in our mouths aren’t simply unwanted passengers. Some participate in biological processes that begin the moment we eat nitrate-rich vegetables.
I find that fascinating.
10. Eating Them Every Day Doesn’t Have to Mean Drinking Juice
When people hear about beetroot’s nitrate research, they often immediately buy bottled beet juice.
But there are plenty of ways to eat the vegetable itself.
You can roast it, boil it, grate it raw into salads, blend cooked beet into dips, or ferment it into traditional beet kvass.
For an everyday routine, I prefer whole beetroot because I also get the fiber.
My Simple Daily Beet Recipe
My easiest version uses:
1 medium cooked beet
1 teaspoon extra-virgin olive oil
A squeeze of fresh lemon juice
A small pinch of black pepper
Cut the cooked beet into bite-sized pieces.
Add the olive oil and lemon juice, toss everything together, and finish with a little black pepper.
That’s it.
The beet is naturally sweet enough that it doesn’t need an elaborate dressing.
How Much Would I Eat?
There’s no universal requirement to eat beetroot every single day.
For someone who enjoys it, around ½ to 1 medium beet as part of a meal is a perfectly practical food-sized serving.
Beetroot is also naturally high in oxalates, so people who have been specifically advised to follow a low-oxalate diet—for example because of certain recurrent kidney stones—may need to moderate it.
And anyone taking blood-pressure medication should remember that beetroot isn’t a substitute for their treatment.
The Part That Surprised Me Most
I expected beetroot to contain vitamins and antioxidants.
I didn’t expect a vegetable to participate in such an interesting chain of events beginning with bacteria in the mouth and ending with the production of a molecule that influences blood vessels.
That completely changed how I looked at it.
You don’t need to buy concentrated shots or expensive beetroot capsules to make beets part of your diet.
Roast one. Slice it. Add it to lunch.
Do that regularly and you’re giving your body dietary nitrate, betalains, folate, potassium, manganese, and fiber from one remarkably simple food.
And perhaps the strangest thing about eating beets regularly isn’t what they promise to do.
It’s how much fascinating biology was hiding inside that little red root all along.
