Pour everything through a cheesecloth-lined strainer.

Gather the cloth and let the cheese drain for 1–2 hours, depending on how firm you like it.

Season with herbs, black pepper, garlic, or olive oil if desired.

Store in the refrigerator and enjoy within 3–4 days.
