My Everyday Beet Drink
For one generous serving, I use:
- ½ small raw beet
- 1 small carrot
- ½ crisp apple
- ½ cucumber
- juice of ½ lemon
- a thin slice of fresh ginger
- 250 ml cold water
- 1 teaspoon ground chia or flaxseed
I wash everything carefully, peel the beet and carrot if needed, chop the ingredients into small pieces, and place them in a powerful blender.
Then I blend until completely smooth.
The result is bright ruby red.
Apple softens beetroot’s earthiness.
Cucumber makes the drink lighter.
Lemon adds acidity.

I Keep the Pulp

The next day broccoli.
Then tomatoes, peppers, carrots, cabbage, beans, or leafy greens.
