There is something fascinating about the old recipes that survived without bottles of supplements, complicated powders, or expensive wellness programs. They were made from ordinary foods, passed from one kitchen to another, and often prepared almost automatically because families had been doing it for generations.
One of those traditional drinks comes from Eastern Europe, particularly Russia and neighboring Slavic countries. It starts with something almost ridiculously simple: two beets, water, a glass jar, and time.
The result is commonly known as beet kvass—a fermented beet drink with a deep ruby color and a pleasantly sour, earthy flavor.
Why Beets Deserve Their Reputation
Slice open a beet and its extraordinary color immediately tells you that this isn’t an ordinary root vegetable. That intense red-purple pigment comes largely from compounds called betalains, naturally occurring plant pigments with antioxidant properties.
Beets are also an important dietary source of nitrates.
After we eat nitrate-rich foods, the body can convert some of those nitrates into nitric oxide. Nitric oxide helps blood vessels relax and widen, which is one reason beetroot has become particularly interesting to researchers studying circulation, blood pressure, and exercise performance.
And then there is fermentation.
Turning beets into kvass changes their flavor completely and allows microorganisms to ferment some of the naturally occurring carbohydrates. It is essentially an old-fashioned method of transforming and preserving a very ordinary vegetable.
The 7-Day Transformation
The first time you prepare beet kvass, there isn’t much to look at.
You put chopped beets into a jar, cover them with salted water, and wait.

Tiny bubbles may begin appearing. The water takes on an increasingly intense ruby-red color. The raw sweetness becomes more tart and complex.
By the end, what began as vegetables sitting in water has become a fermented drink.

Traditional Beet Kvass Recipe
You’ll need:
2 medium beets
1 large clean glass jar
4 cups (about 1 liter) of filtered water
2 teaspoons non-iodized salt
Wash the beets thoroughly and cut them into roughly 1-inch chunks. There’s no need to finely grate them; larger pieces make the finished drink easier to strain.
Place the beet pieces inside the clean jar.
Dissolve the salt completely in the water and pour it over the beets until they are fully submerged. Leave some empty space at the top of the jar.
Keep the beet pieces underneath the liquid using a fermentation weight if you have one.
Cover the jar loosely with a lid rather than sealing it tightly, because gases can develop during fermentation.
Leave it at room temperature and begin tasting after several days. Depending on room temperature and fermentation activity, the flavor will gradually become pleasantly sour and earthy. Many traditional home recipes allow roughly 3–7 days.
Once you like the flavor, strain the liquid into a clean bottle or jar and refrigerate it.
What Happens When You Drink It?
The most interesting scientifically established feature of beetroot isn’t some mysterious detoxification process.
It’s the nitrate–nitric oxide pathway.
Dietary nitrates from beetroot can ultimately increase nitric oxide availability in the body. Nitric oxide participates in normal blood-vessel function, helping regulate vascular tone and blood flow.
Studies of beetroot and beetroot juice have consequently investigated their effects on blood pressure, cardiovascular function, and physical performance.
That’s a much more concrete reason to appreciate beets than many of the extraordinary claims circulating online.
A Drink for Circulation
This is perhaps where beetroot has earned the most attention.
When nitric oxide signals the smooth muscle surrounding blood vessels to relax, those vessels can widen. This process—vasodilation—plays an important role in healthy circulation.
Research examining nitrate-rich beetroot juice has found modest reductions in blood pressure in some populations, although the results vary according to the amount consumed, the person, and the study.
It’s worth making an important distinction here: most clinical research has investigated beetroot or standardized beetroot juice, not homemade beet kvass specifically.
So the traditional drink is an interesting way of enjoying beets, but a jar of homemade kvass shouldn’t be treated as equivalent to the precisely measured beetroot preparations used in clinical studies.
The Fermentation Difference
Fermentation gives kvass another characteristic that ordinary beet juice doesn’t have.
Properly fermented foods can contain live microorganisms. That’s one reason fermented vegetables and drinks have attracted so much interest in discussions about the gut microbiome.
The exact microorganisms and their quantities in homemade beet kvass can vary enormously, however. Temperature, salt concentration, fermentation time, ingredients, and storage all influence what develops inside the jar.
That unpredictability is part of traditional fermentation—and one reason a homemade drink cannot really be compared milligram-for-milligram with a standardized supplement capsule.
But nutritionally, it remains a wonderfully simple way to turn an inexpensive root vegetable into something completely different.
Why I Like the Simplicity
What attracts me most to this old recipe isn’t the promise that it can replace every supplement in the cupboard.
It’s the fact that two ordinary beets can become something genuinely interesting with almost no processing at all.
There is no elaborate equipment.
No artificial coloring is needed—the beets take care of that themselves.
No added sugar is necessary.
And instead of swallowing another capsule without thinking about where its ingredients came from, you’re starting with an actual vegetable you can hold in your hand.
How I Would Drink It
Beet kvass has a strong flavor, so I wouldn’t begin with a giant glass.
Try ¼ cup (60 ml) with a meal and see whether you enjoy it. Once you’re accustomed to the earthy, sour flavor, you might increase that to around half a cup.
Always refrigerate the finished kvass.
And because homemade fermentation naturally varies, use basic food-safety judgment. A pleasantly sour fermented smell is expected; visible fuzzy mold, a rotten odor, or anything that clearly looks spoiled means the batch should be discarded.
The $100 Capsule Question
Can two beets literally replace every expensive supplement?
Of course not—and that’s not what makes this recipe worth keeping.
The fascinating part is that beets naturally contain compounds supplement manufacturers themselves have become interested in, particularly dietary nitrates and betalain pigments.
Instead of imagining beet kvass as medicine in a jar, I think its real appeal is simpler.
It is food doing what good food has always done: providing useful nutrients and plant compounds in a form people can incorporate into everyday life.
Two beets. One jar. A few days of patience.
And at the end, you’re left with a deep-red traditional drink that connects an old Russian kitchen habit with one of the most interesting areas of modern beetroot research.
